Evening Tea Snacks: Jhatpat Whole Wheat Coconut Cookies!!

My daughter keeps on asking me everyday what’s new for snacks with evening chai? So yesterday when she said that she is bored of eating bhujia with evening chai, I decided as a mom, let’s make something healthy as well as yummy for my daughter. So I tried whole wheat coconut cookies!! What a hit it was with my entire family…I ended up making second batch of cookies in half an hour :):). Here is the recipe in case you would like to try freshly baked coconut cookies for your family:

Ingredients:

Whole Wheat Flour : 1 cup

Suji : 1/2cup

Ghee : 1/2 cup

Crushed sugar : 1/2 cup

Coconut: 1/2 cup

Walnut or Almond: As per the number of cookies made ( to be put on the top of the cookies)

Milk: 3-4 tbsp

Baking Soda: 1/2 tsp

Recipe:

1) Mix ghee and sugar together thoroughly with a spoon so that the mixture becomes a little fluffy.

2) Add coconut powder and mix it.

3) Add whole wheat four, suji, baking soda and milk and make a dough from it. Keep it aside for 10 minutes covering the dough with muslin cloth.

4) In the meantime, preheat oven at 180 degree.

5) Make circular balls from the dough and press each round ball a little from the center. In the center, then put walnut or almond in the center.

6) Then bake the cookies for 20 minutes in the oven.

Jhatpat whole wheat healthy cookies are ready to eat ..Serve them hot with a garma garam chai as evening snacks!!

Delicious Punjabi Chole or Chickpeas Recipe

Punjabi Chole undoubtedly is one of the delicacies of Indian cuisine. The minute you mention Punjabi Chole, muh mein paani aa jata hai :):). That’s why I am sharing the recipe of Punjabi chole today.

Ingredients: 

Chickpeas or Kabuli Chane: 1 bowl

Chane Ki Daal: 1/4 bowl

Onion: 2 small pieces

Tomato: 2 small pieces

Garlic: 5-6 individual pieces

Ginger: 1 small piece

Green Chili: 2 piece

Coriander Leaves

Tea Bags (1 or 2)

Vegetable Oil: 2-3 tbsp

Indian Spices: Dry Anardana powder ( 1 tbsp), Crushed Cumin Seeds Powder ( 1 tbsp), Whole Black Pepper ( 8-10 pieces), Coriander Powder (2 tbsp), dal cheeni powder ( 1 tsp), Bay leaves (2).

Spices ( as per taste) : Salt, Black Salt, Red pepper, Asafetida, Jeera

Recipe:

1) Soak Chane ki Daal and chickpeas overnight in water.

2) Now drain the water out of chane ki daal and chickpeas. Now add fresh water, salt, cumin powder, dal cheeni  powder, black pepper, bay leaves and tea bags  in a pressure cooker. Cook them on full flame for 5-7 whistles.

3) After that keep the water from the pressure cooker aside so that it can be used later.

4) Take a deep pan and put oil in it. When the oil becomes hot, add jeera and asafetida in it. Now add chopped onions and saute them till they become dark brown on full flame.

5) Now add crushed tomatoes along with crushed garlic, ginger and green chili. Saute them for 5-10 minutes.

6) Now add salt, black salt, red pepper, anardana powder and coriander powder in the mixture. Add 1 cup of left water which was kept aside in the mixture. Now cook the mixture till it starts to leave oil.

7) Now add chane and chane ki daal and mix them thoroughly. You can add more left water depending on your taste.

8) Garnish with coriander leaves.

Serve punjabi chole with garma garam parathe. Enjoy!!!!

Rajasthan ( Jodhpur) Special: Pyaaz ki Kachori

Pyaaz ki kachori hot with garma garam chai (Indian Tea) and tomato sauce/green chutney on a rainy day is a perfect combination which cannot be declined by anyone. Jodhpur is famous for its pyaaz ki kachori and that is why I am sharing with you the recipe for this delicious snack.

Ingredients:

All Purpose Flour or Maida : 200 gm

Vegetable Oil:  2 tablespoon and for deep frying

Salt – As per taste

Pyaaz ki kachori Masala:

Onion: 4 medium size pieces

Ginger: 1 piece

Green Chili: 2 -3 pieces

Coriander Leaves

Spices – As per taste: Salt, Crushed Black pepper, Red Pepper, Crushed Coriander, Garam Masala, Dry mango Powder ( Amchoor), Black Salt

Recipe:

Pyaaz ki Kachori Dough:

  1. Take All Purpose Flour or Maida and put vegetable oil and salt in it. Make dough out of it ( not too tight or loose).
  2. Cover it with a muslin cloth and keep it aside for 15 minutes.

Pyaaz ki Kachori Masala

  1. Put one teaspoon oil in a pan. Once the oil is hot, put the chopped onions and saute till it becomes light pink. Add all the spices mentioned above and then mix them thoroughly. After heating it for 5 minutes on slow heat, take the masala in a plate and keep it aside so that it can become at room temperature.

Making of Pyaaz ki Kachori:

  1. Take the dough and divide them into thin circular shaped balls like chapati. Roll them into flat piece ( size of a regular poori).
  2. To make kachoris roll out each portion of the dough into a 2.5 inch diameter circle.
  3. Place the masala now in the center of the rolled out portion.
  4. Slowly stretch the dough to surround the filling with the dough.
  5. Seal the ends tightly and remove excess dough.
  6. Roll each filled portion into a 2 inch diameter circle to ensure that the masala does not come out.
  7.  Now press the center of the kachori with your thumb in a easy manner.
  8. Take a pan or kadai for deep frying and put vegetable oil in it. Oil quantity should be half the pan depth such that kachori can be dipped in it.
  9. Boil the oil at smoking point and now put the kachori in it at slow heat.
  10. Fry it completely from both the sides thoroughly till kachori turns golden brown.

Serve pyaaz ki kachori hot with garma garam chai ( Indian Tea) and tomato sauce/green chutney….Enjoy!!

Zayka ka Tadka Special: Chatpate Garlic Potatoes

Garlic Potatoes is really a very simple dish to make at home. It is also very delicious and loved by almost everyone.( Who doesn’t like potatoes in India:):) )

Ingredients:

Baby Potatoes: 250 gm

Garlic Paste: 2 tbsp.

Tomatoes : 2 small pieces

Ginger: 1 small piece

Green Chili: 2 pieces

Olive Oil: 1 tbsp

Coriander

Spices : Salt ,Coriander Powder, Jeera, Red Chili Powder, Turmeric, Asafetida

Recipe:

1) Boil baby potatoes in pressure cooker (one whistle). Peel them now.

2) Crush the tomatoes in the grinder or mixer.

3) Take oil in  a pan. When the oil becomes hot, put jeera in it along with asafetida.

4) Now add crushed tomatoes and saute them for 10 minutes. Add garlic paste, chopped ginger and green chili.

5) Saute the mixture for 1-2 minutes and add all the spices mentioned above. Add half cup of water now and on slow heat, cook the mixture till it starts to leave oil.

6) Mix the peeled potatoes now in the mixture above along with kasuri methi.

7) Garnish with chopped coriander leaves or green chili.

Serve Garma Garam Garlic potatoes. Enjoy!!!!

Soya Oats Pancake – Tiffin Snack for Kids

Soya Oats Pancake is a very healthy and yummy recipe for kids. Being a mother myself, I understand the importance of nutritious food for kids and how important it is for their growth. So I am sharing my recipe today for healthy tiffin snacks for kids: Soya Oats Pancake.

Ingredients:

Oats: 1 bowl

Soya bean: 1 Bowl

Boiled Potatoes: 2 piece

Onion: 1 piece finely chopped

Poha: 2 tbsp

Whole Wheat Bread: 2 slice

Ginger: 1 piece grated

Green Chili: 1 piece finely chopped

Coriander Leaves

Vegetable or Olive oil: 1 tablespoon
Water – 1 cup

Orange Slices : 3

Spices as per taste:  Salt, Black Pepper, Chaat Masala

Recipe:

  1. Soak soya bean in water for 3-4 hours or overnight. Boil them in the morning.
  2. Soak poha in water for 3-5minutes.
  3. Grind oats, soyabean, poha, bread, potatoes in a grinder.
  4. Add rest of the ingredients and spices mentioned above and make the batter by adding water. Mix the batter thoroughly. The batter should not be too thick or thin.
  5. Take a flat nonstick pan or tava and brush it with oil. Now take the batter and spread it in circular shape.
  6. Cook both the sides on medium flame. Garma garam healthy soya oats pancakes is ready for your kids.

Serve it hot with slices of orange and a glass of milk!!

Delicious Indian Snacks For Kids: Sweet Whole Flour Pancakes

Today I am posting a simple but delicious healthy pancake recipe for everyone in the family esp. kids.

SWEET PANCAKE

Ingredients: 

Wheat Flour: 1 bowl

Sigar :1/2 bowl

Cardamom or elaichi powder: 1/2 teaspoon

Coconut Powder: 2 teaspoon

Crushed Almonds: 2 tablespoon

Crushed Cashew Nuts: 1 tablespoon

Crushed Walnut: 1 tablespoon

Butter

Recipe

1) Mix all the ingredients above and make a batter with 2 bowl of milk. The batter can be made thick or thin as per taste and requirement.

2) Take a pan and brush it with a tablespoon of butter. Take a big spoon and pour the batter on the pan. Cook it from both the sides on medium flame for 5 minutes each.

Rich and delicious whole wheat sweet pancakes are ready to be eaten!!

Brocoli Rolls

Ingredients for Broccoli Roll:

Four medium boil potato

Half cup fine chopped broccoli

One TB spoon grated ginger

Two chopped green chili

Chopped coriander leaves

Half tea spoon salt

Red chili according to taste

Garam masala 1/4 tea spoon

One TB corn flour

Vegetable Oil for frying

Ingredients for topping or garnishing:

Half cup fine chopped broccoli

One tea spoon chopped garlic piece

One tea spoon oil

Small pieces of grated ginger , lemon juice , salt & black paper powder according to taste

Recipe:

1) Mix all in gradients & make roll & fry in vegetable oil.

2) For topping or garnishing, fry garlic pieces in oil till light brown. Add half cup broccoli & all ingredients mentioned above for 2 -3 minutes & garnish on rolls

Chocolate Swiss Roll Recipe:

  1. Prepare chocolate cake for chocolate swiss roll. ( For chocolate cake recipe, please click here)
  2. Crush the whole cake thoroughly and then add chocolate frost (recipe below) in it till the consistency is like a dough which we make for chapati…
  3. Take a butter paper and apply the cake dough in a square shape.
  4. Place it properly so that all the four sides and the middle has same thickness otherwise the roll will crack.
  5. Then apply rich cream or whipped cream on it.
  6. With the help of butter paper roll it properly and very slowly.
  7. Keep in the refrigerator for 15 min.
  8. Take it out and apply dark chocolate sauce ( Recipe below) above it and then again keep in the refrigerator for half an hour.
  9. Take it out and cut

Chocolate Frost recipe:

Beat 6 tbsp of butter , then add 1/2 cup coco powder and 3/4 cup sugar.

Again beat it for 5 min. Then add vanilla essence and milk (Add milk only to that quantity unless it becomes a thick fluid )

Dark Chocolate Sauce recipe:

Heat 1/2 cup of milk and switch off the gas. Add 3/4 cup of choco chips and stir until all the choco chips are melted. the pour this dark chocolate sauce on the Swiss roll

Indian Appetizer: Jhatpat Paneer Tikka Special

Once my daughter came back from her work and wanted to eat something tasty as soon as possible as she was very hungry . So I came up with the idea of Paneer Tikka in jhatpat style. They turned out so nicely that now a days we cook it in breakfast and eat a high protein healthy breakfast at home.

Ingredients:

Paneer : 1 cube or 200 gm

Bell Pepper or Capsicum  (Red, Yellow or Green whichever is available) : 1 piece each color

Onion: 1 piece

Fresh (hung) Curd : 1/2cup

Chili Garlic Paste : 1 tsp

Spices: Salt, Red Pepper , Chaat Masala, Red Chili Flakes, Black Pepper

Recipe:

1) Cut paneer into small square pieces.

2)  Mix paneer in fresh (hung) curd . Add chopped bell pepper and onion to it along with all the spices as per taste.

3) Keep the mixture aside for 5-10 minutes.

4) Take a pan and brush it with oil.  Take each single piece of paneer and vegetables and place them on the pan.

Cook them slowly for 5-8 minutes (turn them when necessary on the other side) until they turn brown from all the sides.

Enjoy the Jhatpat paneer tikka with your family!!!

 Vegetable Cheese Bread Cup

Ingredients:

4 whole wheat bread slices

1 tbsp – Butter/ ghee

1 cup of assorted veggies.

2 colored bell pepper, spring onion white root part, cherry tomatoes, frozen peas

Pinch of Black pepper, garlic powder, Italian mix herbs and salt pee taste.

1/2 cup Cheese (I had processed cheese available so used it. You may use mozzarella  cheese.)

Recipe:

  1. Preheat oven at 200°c.
  2. Flatten the bread slice with roller as shown in below pic 1.

1    3.   Apply butter or ghee on both sides. Or just apply on one side and apply little on the mould.

4.  Now place the flattened slice in the mould and press to fit in the mould carefully. If you feel its breaking a lot, just pat with some more butter and pat it. If you eat egg then may use beaten egg to seal the breakage.

2     5. Finely cut all vegies except peas. Mix the spices to it and the peas. If you want may add a tsp of pasta or pizza sauce to the vegies.

6. Now fill the bread mould with the vegies as in pic 2.

8.  Top it with grated cheese as in Pic3.

9. Bake in the oven at 180°c for 10-12 minutes.

10. Cool for 5 minutes and then demould to serve.

Note: I prefer silicone mould as its hasselfree to demould
