Yummy and Delicious Idli Dhokla

Confused… idli and dhokla woh bhi jhutpat…..try this for kids tiffin or for breakfast and surprise your family…

 Idli Dhokladhokla

Ingredients:

Idli Dhokla

Besan or Gram flour: 1bowl

Semolina: 1/2 bowl

Sugar: 1 tablespoon

Vegetable oil: 1 tablespoon

Eno: 3/4 teaspoon

Ginger Paste:1/2 teaspoon

Green Chili Paste: 1/2 teaspoon

Fresh Curd: 3-4 tbsp

Lemon juice: 1 tbp

Spices as per taste: Salt, Turmeric (1/4 teaspoon)

Water: 1 bowl

 Tadka Ingredients:

Oil: 1 tablespoon

Lemon juice: 1tbp

Sugar: 1 tablespoon

Pinch of Salt

Green Chili: 2-4 long cut pieces

Curry leaves 10-12

Coriander Leaves for garnishing

 Recipe:

Idli Dhokla:

  1. Mix all the ingredients and spices mentioned above in besan and suji except Eno and tadka ingredients.
  2. Add 1 bowl of water to it. The batter should not be too thick or too thin.
  3. Boil 4 bowl water in steamer
  4. Now add Eno in batter to it and mix it thoroughly till it becomes fluffy.
  5. Immediately, add this batter in Idli moulds and put it in steamer for 15-20 minutes.
  6. Put a knife inside idli dhokla and take it out to see if it is properly cooked. If the idli is not sticking to the knife, then the idli has been cooked.
  7. Now take it out of steamer and put it aside for cooling (It will look like as shown in the picture below). Take it out Idli dhokla from the moulds.

 Tadka Preparation: 

  1. For tadka, take a deep pan and add oil to it. Once it becomes hot, add mustard seeds and asafetida to it then add lots of curry leaves and green chili to it.
  2. Add one bowl of water in the pan and add salt, sugar and lemon juice to it. Cook it on medium flame till the water starts boiling.
  3. Pour this tadka water with a big spoon on all idli dhokla. Garnish it with green chili and coriander leaves.

Serve soft, spongy and tasty Idli dhokla hot with green chutney and garma garam chai!!!

Indian Breakfast: Ajmer Famous Delicious Kadhi Kachori

Kadhi Kachori is a famous dish of  Ajmer!!

Kadhi kachori is yummy and its taste is just mind blowing.

But how it is possible to make it healthy??

My daughter loves kadhi kachori butt her consition is that it should be healthy,  so I tried this kachori with whole wheat and not maida. Now my daughter and every one is happy and on top of it I made it in Air Fryer!

Kadhi Kachori

Ingredients:

Kadhi

Gram flour: 2 tablespoons

Curd: 1 bowl

Chopped Green chilli: 2 tablespoons and 1 piece

Curry leaves: 8-10 pieces

Grated ginger: 1 tablespoon

Spices- Salt, Red Chili Powder, Cumins seeds, Fenugreek Seeds, Turmeric Powder, Coriander Powder, Mustard Seeds, Hing and Garam Masala as per taste.

Vegetable oil- 2 tablespons

RECIPE

  1. Mix gram flour in curd properly, then add one glass of water.
  2. Put pan on the gas on medium flame then add oil. Add hing and fenugreek seeds and sauté it.
  3. Crush curry leaves, green chili and cumin seeds. Now add in the pan and sauté it.
  4. Add remaining spices and sauté it.
  5. Now add kadhi mixture and stir it till one boil. Now cook it for 40-50 minutes on low flame. You can add more water if required.

Moong Dal ki Kachori

 Ingredients:

Whole wheat flour -1bowl

Vegetable Oil: 3-4 tablespoon for moin

Salt – As per taste

Kachori Masala:

Soaked and crushed moong dal -1/2 bowl

Chopped Ginger: 1 teaspoon

Chopped Green Chili: 1 teaspoon

Chopped Coriander Leaves: 2 teaspoons

Spices – As per taste: Salt, Cumins Seeds, Hing, Crushed Black pepper, Red Pepper, Crushed Coriander, Garam Masala, Dry mango Powder (Amchur), Black Salt and Crushed Saunf.

Vegetable oil- 3 tbspoon for saute and brushing the kachori

Recipe:

Kachori Dough:

  1. Take Whole wheat Flour and put vegetable oil and salt in it. Make dough out of it (not too tight or loose).
  2. Cover it with a muslin cloth and keep it aside for 15 minutes.

Kachori Masala

  1. Put two tbsp oil in a pan. Once the oil is hot, put cumins seeds, green chilly, ginger, saunf, coriander powder and hing then saute on medium flame
  2. Add moong dal and do sauté for 15-20 minutes.. Add remaining spices mentioned above and then mix them thoroughly. After heating it for 5 minutes on slow flame, take the masala in a plate and keep it aside so that it can become at room temperature.

Making Kachori:

  1. Take the dough and divide them into thin circular shaped balls like chapati. Roll them into flat piece (size of a regular puri).
  2. To make kachoris, roll out each portion of the dough into a 2.5 inch diameter circle.
  3. Place the masala in the center of the rolled out portion.
  4. Slowly stretch the dough to surround the filling with the dough.
  5. Seal the ends tightly and remove excess dough.
  6. Roll each filled portion into a 2 inch diameter circle to ensure that the masala does not come out.
  7. Now press the center of the kachori with your thumb in easy manner and surrounding equal.
  8. Pre heat airfrier for 5-8 minutes.
  9. Brush the kachori ball with oil for shining and put in the air fryer for 20-25 minutes. After 10 minutes of putting in the Air fryer,  then change the side of the kachori.
  10. Put the kachori in the deep plate and add garma garam kadhi. Garnish with namkeen mixture, coriander leaves and green chill.

Kadhi Moong Dal kachori is ready to serve. Enjoy!

 

 

 

Indian Sweet: Healthy Suji Coconut Laddu for Kids!

 Today I made Suji Coconut Laddu on Happy Hanuman Jayanti  for everyone!!! This is a personal favorite of every kid as it has coconut and suji which they like and is a sweet:). So try this for your kids and see if they don’t love it as their evening snack.

Suji coconut laddu

Ingredients:

Semolina (Suji) – 1 bowl

Ghee – 1 tablespoon

Condensed milk – 200 gm

Coconut powder- 1 bowl

Chopped dry nuts- 2 tablespoon

Cardamom ( Elaichi) Powder – ¼ teaspoon

Recipe:

  1. Take a pan and heat ghee in it.Add suji to the pan and heat on medium flame for 30 minutes. Stir it constantly in between.
  2. Add coconut powder and sauté it for 3-5 minutes then add dry nuts and cardamom powder in it.
  3. Now put off the gas and add condensed milk to it. Now mix it properly.
  4. Make circular balls of suji coconut  laddu now when the mixture is warm.

Yummy Suji Coconut Laddu is ready to serve.

 

Indian Pickle: Tasty Kair with Kaccha Aam ka Achaar

Today’s recipe is Indian pickle of  kair  with very little oil…. Yum and super tasty…..perfect achaar……

I usually prepare this achaar when I am going on a travel or a picnic because it tastes so awesome with bread, khakara, Paratha or even with poori…..:)

Kair with kaccha aam achar......

Ingredients:

Fresh Kair: 1 bowl/ 200 gm

Grated Kaccha Aam (Keri):1bowl /250 gm.

Salt: 3 teaspoon

Mustard oil or as per your choice-125 ml or 1/4 bowl

Fenugreek seeds: 2 teaspoon

Fennel seeds : 2 teaspoon

Black seeds (Kalongi) : ½ teaspoon or as per taste

Salt: 1 tablespoon or as per the taste

Red Chili Powder:  1 tablespoon or as per the taste

Turmeric powder: 1 tablespoon or as per the taste

Asafoetida:  ¼ teaspoon or as per the taste

Cumin seeds: 1 teaspoon or as per your taste

Recipe

  1. Wash kair  properly and  keep it for 2 days  in water. Now take it out  from water and again keep in fresh water after mixing  1.5 teaspoon salt and  keep it for 3 days .
  2. You can again take it from salty water and keep the  kair in fresh water after mixing1.5 teaspoon salt and keep it for 3 days to reduce bitterness of kair.
  3. Drain the water and remove the stem (danthal). Dry it on muslin cloth for two hours.
  4. Put pan on gas and add oil, asafetida, kalonji, and cummin seeds then heat on medium flame. Put off the gas.
  5. Put soaked kair and grated kaccha aam in one bowl then add remaining spices and heated oil. Mix it properly with spoon.
  6. Cover the bowl with plate then kept for one day outside.
  7. Fill it in a jar then kept in a fridge

If you want to keep it for one year then the qty of the oil should be such that it floats at the top of the pickle in the jar. You can keep outside instead of in fridge.

Serve with cold paratha, bread, mathri and khakraz etc.!!

Yummy and Different Kair ki Sabzi!

Today  I made Kair  (tenti or dela or teet) ki Sabji, kuch khatti, kuch teekhi 🙂

Kair ki subji

Ingredients:

Fresh Kair- 1 bowl/ 200 gm

Salt-4 teaspoon or as per your taste

Vegetable oil- 2 tablespoon

Spices ( As per taste)- Salt, Red Chilli Powder, Coriander Powder, Turmeric Powder, Asafetida, Cumin Seeds and Kalonji as per your taste

Recipe

Chuparustam (Cabbage Kheer)

Cabbage Kheer

Ingredients:

Milk-500 ml.

Grated Cabbage-1 bowl

Grated Jaggery-1/2 bowl

Honey- 1tbsp

Chopped almond, Pista (Pistachio)-1/2 bowl

Elaichi (Cardamom) powder-1/2 tsp

Saffron- 5-10 leaves

Whole dry nuts and resin for garnishing as per your choice.

Ghee-1tbsp

Recipe:

  1. Boil grated cabbage.
  2. Put milk on gas and boil it till it becomes half on low flame and stir continuously with spoon.
  3. Add boiled cabbage in the milk cook it on low flame for 10 minutes.
  4. Add grated jiggery, honey, chopped dry nuts, elaichi powder and saffron leaves and mix it properly. Take one boil then put off gas.
  5. Put pan on gas and add ghee. When ghee heated, add dry nuts and resin and sauté it for 1-2 minutes on low flame. Put off gas.
  6. Garnish with whole dry nuts and resin.

Ice Tea with Lemon and Mint

Tea time mein TEA….na ji na not a good idea…..enjoy this ICE TEA with fresh lemon and mintand get refreshed

Ice tea

Ingredients:

For one glass

Water- ½ glass

Tea-1/2 tsp

Sugar- 1tbsp or as per your taste

Lemon juice- 1tsp

Lemon slice-3-4

Mint leaves-5-7

Ice cubes 5-7 pieces

Recipe:

  • Put pan on the gas then add water, tea and sugar and take one boil. Put off gas
  • Sieve the boil water.
  • Take one glass then add mint leaves, lemon slice and juice.
  • Now add ice cubes then tea water and mix it properly.
  • Garnish with lemon slice and mint leaves.
  • Put straw in it.

Refreshing ice tea is ready to drink.
