Snow Mountain Cake

Yesterday was a very special day in our household. It was my hubby Dr. Haldia’s birthday who has been a pillar of strength in my life… Thanks to him, Zayka ka Tadka is where it is today…

So to celebrate this special day, I made this SNOW MOUNTAIN CAKE for hot summers…

Snow Mountain cake1

Ingredients:

Vanilla Cake

Vanilla essence: 1/2 teaspoon

All-purpose flour: 1 1/2 cups

Sugar: 3/4 cup

Baking powder: 3/4 teaspoon

Pinch of salt

Baking Soda: 1/4 teaspoon

Milk: 1cup

Oil: 4 tablespoons

Chocolate cake:

Cocoa powder: 3 tablespoons

All-purpose flour: 1 1/2 cups

Sugar: 3/4 cup

Baking powder: 3/4 teaspoon

Pinch of salt

Baking Soda: 1/4 teaspoon

Milk :1cup

Oil: 4 tablespoons

Grated White chocolate for garnishing: 1 bowl

Chocolate coins: 10-15 for garnishing

Recipe:

  1. Sieve dry ingredients for Vanilla cake in a bowl. Then mix wet ingredients and beat them for 4-5 minutes.
  2. Do the same thing for Chocolate cake!
  3. Now both batters are ready. Take a cake tin and brush it with oil.
  4. Transfer the Chocolate and Vanilla batter one by one.
  5. Place in the preheated (180 degrees) oven and bake for 35-40 minutes.
  6. The cake is done when you see brown colour on the top or the toothpick comes out clean.
  7. Cool it on a rack for 1 to 2 hours in fridge and then transfer to a plate.
  8. Melt the white chocolate in double boiler then spread it on top of the cake with large size knife and give effect of snow mountain shape.
  9. Garnish with chocolate coins on top of cake then keep it in fridge for 30-40 minutes.
  10. Enjoy Snow mountain egg less cake with your family and friends.

 

Chilled Mango Mix Fruit Cake

Summer Special”Chilled Mango Mix Fruit Cake”…

Chilled Mixed mango cake

Ingredients:

Chopped Mango-1 bowl or as per your requirement

Chopped Grapes- 1 bowl or any other fruits

Sugar-1/2 bowl or as per your taste

Chopped Almond-1 tbsp

Elaichi (Cardamom) powder-1/4 tsp

Chopped Pista (Pistachio)- 1 tsp

Fruit Cherry for garnishing

Recipe:

  1. Put chopped mango and grapes in fridger for 6-8 hours then take it out from fridge and keep it for 5 minutes outside.
  2. Put mango, grapes and sugar in the mixer and churn it to make smooth paste then add chopped dry nuts and cardamom powder and mixed it properly with spoon.
  3. Take it out in cake mould or bowl and keep it in fridger for 3-4 hours.
  4. Take out cake mould from fridge and separate the cake with help of knife and put on the plate.
  5. Garnish the cake with dry nuts and fruit cherry.

You should take it out from fridge when you want to eat.

Sehgari (Vrat) Cake

For the auspicious day of Shivratri we pray to Lord Shiva to eliminate darkness of our life and celebrate sucess and happiness….

So to celebrate this occasion, you can make delicious Sehgari Cake …

Sahagari ( Vrat) Cake

Ingredients:

Rajgiri Flour: 1 cup

Samak Flour:  1/2cup

Singara Flour: 1/2cup

Sugar: 3/4cup

Milk:1 cup

Baking powder: 1/4tsp

Baking soda: 1/4 tsp

Chopped Walnuts: 4tbsp

Olive oil: 2-3 tbsp

Recipe:

  1. Mix all these ingredients together and prepare the batter. Mix it till the batter is smooth.
  2. In a pan, grease the bottom with a brush dipped in oil. Pour the batter in the pan then add chopped walnuts.
  3. Preheat the oven for 10 minutes to 180 degree C.  Place the pan and bake the cake for 30-40 minutes then  cool it.
  4. Cut the cake in the slices.

Enjoy saghari  (Vrat) cake!!

Choco Ring Cake

Choco ring cake

Ingredients:

Cocoa powder -3tbsp

All purpose flour-3 cups

Sugar-1 1/2 cup

Baking powder-3/4tsp

Baking Soda-3/4tsp

Pinch salt

Orange Juice-3/4 cup

Oil- 4tbsp

Dark chocolate-1/2cup

Chocolate flakes-1/2cup

Chocolate Sauce-2tbsp

Crushed Sugar- 1tbsp

Recipe:

1) Sieve your dry ingredients of chocolate cake in a bowl. Then mix wet ingredients and beat it for 4-5 minutes

2) Take a cake ring mould and brush it with oil. Transfer the batter.

3) Place in the preheated (180 degrees) oven and bake for 35-40 minutes.

4) The cake is ready when you see brown colour on the top or the toothpick comes out clean.

5) Melt dark chocolate in doubled boiler then coating it cake from all sides.

6) Garnish with chocolate flakes and Sauce.

7) Dusting the cake with crush sugar

8) Cut the pieces of cake

Chocolate Marble Pastries

Chocolate Marble Pastries

Ingredients:

 Vanilla Cake

Vanilla essence-1tsp

All purpose flour-1 1/2 cups

Sugar-1 cup

Milk- 1 cup

Baking powder-1tsp

Pinch salt

Olive oil- 5tbsp

Chocolate cake:

Cocoa powder -2tbsp

All purpose flour-1 1/2 cups

Sugar-1 cup

Milk- 1 cup

Baking soda-1tsp

Pinch salt

Olive oil- 5tbsp

Other ingredients:

Dark Melted chocolate-1/2 bowl

Coloured vermicilles balls- 2 tbsp

Recipe:           

1) Sieve your dry ingredients of vanilla cake in a bowl. Then mix wet ingredients and beat it for 4-5 minutes.

2) Do the same thing for Chocolate cake.

3) Now, both batters are ready. Take a cake tin and brush it with oil.

4) Transfer the batter alternately (Chocolate, vanilla and chocolate). Swirl- using the handle of a wooden spoon or a butter knife, swirl the batter to create a marbled effect. Go slowly here.

5) Place in the preheated (180 degrees) oven and bake for 35-40 minutes.

6) The cake is done when you see brown colour on the top or the toothpick comes out clean.

7) Cool it on a rack then transfer into plate and cut into pastry pieces then spread melted chocolate on pastry pieces.

8) Sprinkle coloured vemicilles on it.

8) Now keep it for 10 minutes in fridge.

Again here I made Christmas  chocolate cake with lots of chocolate  on Christmas and wishes for my Zayka team and family…….

Chocolate cake-1

Ingredients:

Cocoa powder -2tbsp

All purpose flour-1&1/2 cups

Sugar-3/4 cup

Baking powder-1/3tsp

Baking Soda-3/4tsp

Pinch salt

Milk-3/4 cup

Oil- 4tbsp

Dark chocolate-1/2cup

Chocolate flakes-1/2cup

Chocolate pearls-2tbsp

3) Take a cake tin and brush it with oil. Transfer the batter.

4) Place in the preheated (180 degrees) oven and bake for 35-40 minutes.

Dates Brownie sizzler

Sardi mein ice cream ka maza toh ice cream lovers ko he pata hai…. So in this winter I tried this healthy (because of dates) sizzler with chocolate sauce…

Dates Desert Brownie

Ingredients:

Dates Chocolate Brownie:

Cocoa powder -2tbsp

All purpose flour-1 1/2 cups

Chopped dates-1/2cup

Sugar-3/4 cup

Baking powder-1/3tsp

Baking Soda-3/4tsp

Pinch salt

Milk-3/4 cup

Oil- 4tbsp

Vanilla Ice cream or any flavour you like

Chocolate Sauce for garnishing

Recipe:

1) Sieve your dry ingredients in a bowl. Then mix wet ingredients and beat it for 4-5 minutes

3) Now, batter is ready. Take a cake tin and brush it with oil.

5) Place in the preheated (180 degrees) oven and bake for 35-40 minutes.

6) The Brownie is ready when you see brown colour on the top or the toothpick comes

out clean.

7) Cool it on a rack for 10 minutes and then transfer to a plate. Cut the pieces of

8) Put Sizzler plate on gas and heat on medium flame then add 1 tbsp ice cream and

put the brownie pieces then spread ice cream on it and garnish with chocolate

sauce. Put off gas

Serve immediately to your family members and friends and celebrate the Christmas

 

 

Tooty Fruity Sooji Cake

With Christmas and New year coming , cakes are such a big hit..

The only worry being that eating too much of cake is not healthy …so I thought what can I make for my family which they can eat guilt free..

Presenting the first cake in ‪#‎ZKTcakes‬ – Healthy and Delicious Tooty Fruity Sooji Cake..

Tooty Fruity Sooji Cake

Ingredients:

Sooji:1 cup

All purpose flour or whole wheat flour: 1/2cup

Tooty Fruity: 1/4cup

Sugar: 3/4 cup

Coconut powder: 3/4 cup

Milk: 1cup

Vanilla Essence: 1 tbsp

Olive Oil: 4 tbsp

Baking soda: 1/4 tsp

Baking Powder: 3/4 tsp

Pinch of salt

Tooty Fruity: 1/4cup for garnishing

Recipe:

1) Sieve the suji and all purpose flour or whole wheat flour: Mix all the ingredients.

2)  Add milk in the mix ingredients for 8-10 minutes so that the batter becomes fluffy.

3) Preheat the oven at 180 degrees for 10 minutes.

4) Take the baking pan and grease it with oil. Now pour the batter in it and sprinkle  tooty fruity then immediately put it in the preheated oven and bake it for 30-40 minutes. Take it out.

Yummy butter free eggless tooty fruity suji cake is ready  to serve and enjoy with family and friends.

 

 

Adventure Special : Eggless Suji Chocolate Chips Kadhai Cake…

Many members have asked me how to make Kaadhai Cake which is tasty and delicious too for family members….So I thought I will make one for all the members on my special day today…

What a wonderful day it has been with so much of love and affection showered by my ZKT family..feeling grateful!!!

So today I made this very special dish for all of you!!!

Adventure Special : Eggless Suji Chocolate Chips Kadhai Cake…

 

Ingredients:

Sooji : 1.5 bowl

Milk: 2 bowl

Eno: 1 tsp

Crushed Sugar: 1 bowl

Coconut Powder: 1/2 bowl

Elaichi or Cardamom Powder: 1/4 tsp

Grated Almond: 2 tbsp

 

Dark Chocolate for garnishing and top layer ( as needed)

Eggless Suji Chocolate Chips  Kadhai Cake 1

Recipe:

1) Mix every ingredient except  dark chocolate  and eno. Make a thick batter.

2) Take a kadhai nad add 1 tbsp butter or ghee to it.  Now take the sooji mixture and add eno to it. Mix the batter and pour it into the kadhai immediately.

5) Now cover the kadhai with the plater and heat it in slow flame for 10 -15 minutes.

6) Flip the mixture completely and heat the other side for 10-15 minutes.

7) Now take the dark chocolate and melt it in microwae or as double boiler (take boiled water in a pan and in another bowl take chocolate and keep the bowl in the pan so that it melts completely).

8) Now on one side, spread the melted chocolate on top covering the cake completely.

Garnish it grated chocolate chips or crushed chocolate. Enjoy the Kadhai Cake with your family!!
