Aaj i special recipe hai RAJASTHANI SPECIAL: KESAR BADAAM KI MALAI WALI ICE CREAM

My daughter loves this ice cream so it was her request, I made this yesterday¬†ūüôā

Ingredients:

Milk : 3 cup

Milk Powder: 1 cup

Cream or Malai : 1 cup

3/4 cup : Crushed Sugar

Corn Flour: 3 tsp

Badaam, Kesar, Pista, Illaychi ( As per taste)

Recipe:

1) Take the milk powder and cornflour and mix or beat it with a little water so that it becomes smooth in texture.

2) Pour milk in a deep pan and put it on stove or gas. Now add the milk powder & corn flour mixture.

3) Keep stirring the milk till it starts boiling.

4) Take the pan off from the gas and let it cool down for 10-15 minutes.

5) Now in a mixer, add the milk, sugar, malai or cream, badaam, kesar, pista and illaychi. Now start the mixer and let it mix. Switch off the mixer. Do this for 4-5 times so that it properly gets mixed. ( In case¬†you don’t have mixer, then add all this in a bowl and mix it with hand for 3~5¬†minutes. The ice cream will still come out to be soft)

7) Now pour in icecream mould or box and freeze it in the freezer. In 8-10 hours, soft and delicious ice cream is ready to eat.

Garnish it with cut slices of badaam.

KERRY GOONDE (LESVE) KA AACHAR ( Pickle)

Zaykedaar Kerry (kaccha aam) Goonde (lesve) ka Achaar….

RECIPE:

INGREDIENTS:

Goonde- 1kg

Kaccha Aam (Keri)- 1/2 kg

Fenugreek seeds- 250 gm

Fennel seeds- 2tsp

black seeds (Kalongi)- 1tsp

Crushed mustard seeds- 2tsp

Mustard oil-1kg or 1 and 1/2kg

Salt ( as per the taste)

Red chilli powder ( as per the taste)

Turmeric ( as per the taste)

Asafoetida( as per the taste)

METHOD:

1. Put 1 kg goonde in boiling water and boil it for 2-3 minutes Then take out the goonde from the water and put on a clean cotton cloth for       drying

2. Remove the cap of the goonde from the top

3. Wash Kaccha Aam and  cut in small pieces and keep them for drying

4. Heat some oil in pan for some time, then remove it from the heat and cool down to mild temperature.

5. Mix all the spices in the oil  then mix the goonde and  cut pieces of kaccha aam in it and kept it for an overnight

6. Next day take more oil and heat it in a pan and cool down to mild temperature then mix with the one kept at overnight

7. Fill the pickel in a jar. The qty of the oil should be such that it floats at the top of the pickle in the jar.

Serve with cold parantha and khakraz!!

Rajasthani Special: Besan Pyaaz ke Laziz Parathe

Sunday ko jab Sab ki chutti to wives ki bhi chutti honi chahiye ..isliye I made brunch today ( breakfast +lunch )..Mast tasty and ekdum shandaar:

Rajasthani Special: Besan Pyaaz ke Parathe!!!!  So lunch ki chutti and ghar par bhi Sab khush.

Ingredients:

Besan or chickpea flour : 1 cup

Onion: 2 small pieces

Oil: 1 tbsp

Green Chilli : 2 pieces

Ginger: 1 small piece

Coriander Leaves

Spices ( As per taste): Salt, Red Chilli Powder, Chaast Masala, Asafetida, Turmeric Powder, Sauf Powder

Recipe:

1) Take a pan and heat oil in it. Once the oil is heated, add asafetida. Now add chopped onion, green chilli, ginger and besan, along with all the spices mentioned above. Heat the mixture now for 4~5 minutes on medium flame.

2) Now make dough from wheat flour Prepare circular balls from it and roll them in a circle. Fill the masala in between and close it from all the sides. Now roll it into a circle like a chapati or paratha. Heat the tava and cook laziz besan pyaaz ke parathe from both the sides as you want with ghee or butter.

3) Serve hot with Leswe ka achaar or green chutney.

Quick and Easy Healthy Indian Breakfast Recipe : Bread Uttapam!!

My daughter got up late today in the morning..so she said with morning tea, Mom please make some tasty instant breakfast too…

So this got me thinking and I came up with the idea of Instant and healthy Bread Uttapam!!! Tasted yum and can be made in five minutes..:):)

Ingredients:

Whole Wheat Bread : 4 slices

Sooji: 1 bowl

Fresh Curd: 1/2 bowl

Mixed chopped Vegetables: 1 bowl ( Capsicum, Onion , Tomato, Carrot or any vegetables that is available at home)

Green Chilli : 1 piece

Ginger: 1 piece

Coriander Leaves

Spices ( as per taste): Salt, Red Chilli Powder, pinch of Turmeric Powder, Chaat Masala

Vegetable Oil: 1 tbsp

Recipe:

1) Cut the bread slices in round shape with cutter or a katori.

2) Mix sooji, curd , 2 bowl of water, chopped vegetables and all the spices mentioned above. Mix the batter and make sure it is thick.

3) Heat the pan and grease it well with oil or butter. Take the bread slice and apply the thick batter with a spoon on one side. Now put the slice on the pan with the side with the batter facing below. Apply the batter now on the side facing above.

4) Heat both the sides for 5~7 minutes on medium flame. Bread Uttapam is ready!!

Serve it hot with garmagaram chai and green chutney…Enjoy!!!!

Quick and Easy Gujrati Breakfast: Handvo or Handvi

I have always loved Gujrati food, its light and easy on stomach.

So today I  made instant vegetable handvo or handvi as breakfast for the family. It turned out to be amazingly yumm. Here is the recipe..

3 s handvo or handvi

Ingredients:

Sooji : 1 bowl

Water: 2 bowl

Fresh Curd: 2 tbsp

Eno: 1/2 tbsp

Chopped Mix Veggies ( Whatever is available ~ tomato, onion, carrot, cabbage etc. ) : 1 bowl

Green Chilli: 1 piece

Ginger: 1 piece

Coriander Leaves

Vegetable Oil: 1 tbsp

Spices: Salt, Red Chilli Powder, Mustard Seeds, Curry Leaves, Chaat Masala Powder, Asafetida.

Recipe:

1) Mix water, curd and sooji and make a thick batter.

2) Add chopped vegetables,  green chilli, ginger and coriander leaves to it. Mix salt, red chilli powder and chaat masala powder in the batter.

3) Take a kadhai nad add 1/2 tbsp oil to it. Add mustard seeds, asafetida and curry leaves to it.

4) Take one bowl of sooji mixture and add eno to it. Mix the batter and pour it into the kadhai immediately.

5) Now cover the kadhai and heat it in slow flame for 10 minutes.

6) Flip the mixture completely and heat the other side of Handvo for 5 minutes.

Serve the garma garam handvo or sooji ke dhokle with green chtuney. Enjoy!!!!

Delicious Breakfast Recipe : BREAD DHOKLA

Today my husband asked “kuch aisa banao jo aaj tak kabhi nahi banaya”

I just had bread in my fridge so came up with a completely new dish:

Serve it up with green chutney and see for yourself what is the reaction of your family.. :):)

Ingredients:

Whole Wheat Bread : 5 slices

Sooji : 1/2 bowl

Curd: 2 tbsp

Vegetabe Oil : 1 tbsp

Eno: 1tsp

Green Chilli: 2 pieces

Ginger: 1 piece

Coriander Leaves and Curry Leaves : As per taste

Spices ( As per taste): Salt, Red Chilli Powder, Turmeric Powder. Chaat Masala, Mustard Seeds , Asafetida

Recipe:

1) Churn the bread into pieces in grinder.

2) Mix the bread pieces, sooji, curd ,salt and 2 bowl of water well. Add grated ginger. chopped green chilli. coriander leaves, and all the spices mentioned above ( except mustard seeds). Mix the batter well and make sure that the batter is a bit thick like we make for pakoras.

3) Take a steamer and when the water starts boiling, add eno to the batter, mix it  and  instantly pour the batter into mold or deep pan. Put the mold immediately in the steamer and cover it with a plate. Let it cook for 15-20 minutes.

4) Let the pan now cool down and once it does, take the dhokla out of the mold. Cut it into pieces.

5) In a pan, add oil. When the oil gets heated, add mustard seeds, asafetida, curry leaves and chopped green chilli. Once the tadka is prepared, add the dhokla or khaman pieces in it.  Mix them well. You can also add red chilli if you want to make it even more spicy.

6) Garnish it with chopped coriander leaves.

Enjoy the yummy BREAD DHOKLA with green coriander chutney and enjoy your day !

Jhatpat Kerry (kache aam) ka Achaar ( Indian Pickle) in 5 Minutes!!

Today my daughter said “Mumma, please make something tasty which I can eat with paratha….and please no sabji”

So I made Jhatpat Kerry (kache aam) ka achaar in 5 mns….

It was so yummy that my tomorrows lunch menu has been decided already :):).

Here is the recipe:

Ingredients:

Kaccha Aam: 2 piece

Mustard oil : 4 tbsp

Dana Methi : 1 tsp

Sauf : 1 tbsp

Kalaunji : 1 tsp

Jeera: 1 tsp

Mustard Seeds: 1 tsp

Asafetida : 1/4 tsp

Salt, Red Chilli Powder, Turmeric Powder ( As per taste)

Recipe:

1) Wash kaccha aam properly and cut it into small pieces

2) Take a deep pan, add oil to it.When oil gets heated, add all the achaari masala mentioned above.

3) Add the cut pieces of kaccha aam to the pan and mix them well. Now add all the spices and mix it.

4) After mixing, immediately take it off the gas and jhatpat kacche aam ka achaar is ready.

Enjoy it with puri or paratha or mathri or bread :). Khoob khao and maje karo :):).
