Crispy Roasted Chickpeas

Festival Season mein, we avoid sweets and namkeen for our health……

So in this HOLI, why not a healthy option of namkeen??

Try this super healthy namkeen made in airfrier very tasty and crispy…..

Crispy Chole

Ingredients:

Overnight Soaked Kabuli Channa (Chick peas)-1 bowl.

Vegetable oil- 1tbsp or as per choice

Spices: Red chilli powder-1 tsp, Salt as per taste, turmeric powder-1/4 tsp, ginger powder-1/4 tsp, garlic powder-1/4 tsp, mango powder-1/4 tsp,  Roasted jeera powder-1/2 tsp, Hingh (Asafoetida)- one pinch and Garam Massala as per your taste

Recipe:

  1. Boil Chickpeas with 5 bowl of water, salt and one tea beg in pressure cooker upto 2-3 whistles. Then take out chole from it and spread on cotton cloth or towel then dry it.
  2. Now take Chickpeas in bowl than add oil and all spices. Properly mix it
  3. Preheat Airfrier at 180 degree for 5 minutes then put the Chickpeas in airfrier container and bake for 35-40 minutes. If you want more crispy then check it and increase the 5-10 minutes. Take it out and cool it.

You can also make it in Oven

Now Crispy Roasted  Chickpeas is ready to serve with garma garm tea.

Leftover Roti Kasta Kachori

Kachori ka naam sunte he accha sa lagne lagta hai….aur agar kachori roti ke ho toh???

Yesterday, My hubby skip his dinner so today morning I had roti in my kitchen and thinking what to do….and I tried this aalo stuff kasta kachori in breakfast..
Believe me my hubby is so surprised and happy and he said he is ready to skip today’s dinner also for this yum kachori…

Left over roti kashta kachori

Ingredients:

Leftover Roti-4

Boiled  meshed potatoes- 1 bowl

Chopped onion-1/2bowl

Chopped Green chili and ginger-2tsp

Chopped coriander leaves-2tbsp

Sesame seeds-2 tbsp

Vegetable oil for frying

For binding- Besan or bread crump- 2tbsp if required

For spices- Salt, red chili powder, chaat masala, mango powder and garam masala as per your taste

 Recipe-

1 Dip the roti in 2 glass of water for 5 minutes. When it becomes soft then squeezed it.

  1. Mixed vegetables and spices in meshed potato properly.
  2. Meshed the soft roti properly then makes circular balls then press deeply so potato masala can be filled it.
  3. Put the potato masala in the centre and close it and give the shape of Kachori
  4. Coat the kachori with sesame seeds.
  5. Deep fry the Kachori on medium flame.

Yummy leftover kasta kachori is ready to eat with green chutney or sauce or curd as you like.

 

Suji Ki Kachori

Suji ki kachori…..sounds healthy and yummy……

I am Rajasthani and can’t live without kachori or marchi bada but health is also important so today I made healthy kachori in my style…

Suji ki Kachori

Ingredients:

Semilona (suji)-1bowl

Vegetable Oil:1 tablespoon for moin

Ajawain-1/2tsp

Water- 2 bowl

Salt – As per taste

Filling Masala:

Boiled and mashed Potato-1 bowl

Ginger: 1 piece

Green Chili: 2 -3 pieces

Coriander Leaves

Spices – As per taste: Salt, Crushed Black pepper, Red chilly powder, Garam Masala, Dry mango Powder (Amchoor), Black Salt

Vegetable oil- for frying the kachori

Recipe:

Kachori Masala

  1. Mix all ingredients of filling masala in mashed potato properly

Suji  ki Kachori  Dough:

  1. Boil water in the pan then add suji and stirring slowly and add ajawain, salt and oil, Mix properly on slow flame. After mixing properly, put off gas. Cool the dough by mixing with spoon. When dough is warm, make small circular ball and press it.
  2. Now fill 1 tbsp filling masala then seal it slowly like kachori shape to ensure that the masala does not come out.

     Making of Suji ki Kachori:

  1. Put pan on the gas and add oil. Heat it on high flame the add kachori and fry it on medium flame on both side. When it becomes kurkuri then take it out on bloating or any clean paper to soaked excess oil.

Now khaasta  Suji  ki kachori is ready to serve  with garma garam chai (Indian tea) and tomato sauce/green chutney….Enjoy!!

BHAKAR WADI

Hey friends..Kem cho…..again a very happy Danteras to all of you….. Aaj mein aap sab ke liye le kar aaye hoon a very famous gujarti BHAKAR WADI…..

Bhakarwadi

Ingredients:

All Purpose Flour or Maida: 2bowl

Vegetable Oil: 4 tablespoon

Salt – As per taste

Azawain-1/2tsp

Filling  Masala:

Besan (Gram Flour) – 2tbsp

Grated Ginger: 1 piece

Grated Green Chili: 2 -3 pieces

Spices – As per taste: Salt-1 tsp, Black pepper-12-15 piece, Chilli powder- 1tsp, Whole Coriander-2 tbsp, Garam Masala-1/2 tsp, Dry mango Powder (Amchoor)-1 tsp, Black Salt- ¼ tsp, asafetida (Hing)- pinch, Saunf-1 tbsp, White sesame seeds-2 tbsp, Sugar-1 tbsp and poppy seeds-1tbsp.

Recipe:

Dough:

  1. Take All Purpose Flour or Maida and put vegetable oil , ajawain and  salt in it. Make dough out of it (not too tight or loose).
  2. Cover it with a muslin cloth and keep it aside for 15 minutes.

 

Filling  Masala:

  1. Mix all ingredients of filling material including spices and sugar and grind in grinder for 2-3 minutes. Take it out in plate then add1 tbsp oil and properly mix it.

Making the Crispy bhakari roll:

  1. Take the dough and divide them into big circular shaped balls then make thin large size chapati then spread filling  masala on it. It should cover the chapati properly and evenly distributed.
  2. Now roll it properly and press it and cut the pieces of 1 -2 cm .
  3. Put pan on the gas and add oil for fry then heat on medium flame. Put cut pieces of bhakarwadi in it and fry from both on low flame. Take it on plate after frying out.

Serve crispy bhakarwadi with garima garam chai ( Indian Tea) …Enjoy!!

 

Ratlaami Sev

 Sev ho toh ratlaam ki babu….. a famous Spicy and chatkaredar sev…..aaise Sev Jo khaye woh roye Jo na khaye woh bhi…..

Ratlami Sev

Ingredients:

Gram flour (Besan) – 2 Bowl

Baking soda- pinch

Oil for fry and moin

Spices-Salt as per taste, turmeric powder-1/4 tsp, Cinnamon Powder-1/2 tsp, Grinded powder of 8-10 pieces of cloves, black salt- as per taste and ajwain-1/2tsp and asafetida as per taste

Recipe:

  1. Put besan in bowl and add 5-6 tbsp oil then add baking powder and all spices in it then mix properly with adequate water to make dough
  2. Put pan on gas then add oil for fry and heat on medium flame for 7-10 minutes.
  3. Use sev maker disc as per your choice and brush the oil inside of sev maker or on dough so it dough not stick in the sev maker.
  4. Fill the sev maker with dough upto 1/3 to ½ of sev maker. Press the sev maker in circular way over heated oil. When one side fried then fry the other side. When fried properly then take it out and cool it completely.

You repeat the process till you completely used the dough.

RAJ KACHORI

My all time favorite recipe and a very interesting option for this festival season…

Ingredients

 Kachori

All purpose flour ( Maida)-1 bowl

Wheat Flour- 1 bowl

Semolina Flour (Suji)- 1 bowl

Salt-1tsp

Vegetable oil-4tbsp for moin

Lemon Juice- 1tbsp

Vegetable oil for fry

Filling  

Boiled Black Whole or kabuli channal-1 bowl

Boiled chopped potatto- 1 bowl

Chopped Onion, Kheera, Green chilli and Coriander- 1 bowl

Crushed mathari- 1 bowl

Garnishing

Nylon sev-1/2 bowl

Coriander chutney- 4 tbsp

Tamarind sweet chutney- 4 tbsp

Mashed curd- 1bowl or as you like

Spices-Salt, Red chilli powder and chaat  masala as per your taste

Recipe:

Kachori

  1. Mix all flour in one bowl then add salt oil, lemon juice and water to make normal dough like puri. Cover with muslin cloth for 30 -45 minutes.
  2. Make round ball and make puri size. It should be evenly from all sides.
  3. Put pan on gas then add oil and heat on high flame till smoking point then do it on low flame
  4. Now put puri and fry on both side till it becomes kurkuri then take it out on the jhar and make hole in the centre. Cool it. It should be fried slowly on low flame .
  5. Take kachori in the plate and fill it with filling ingredients as per your taste then garnish with   with curd, coriander and tamarind  chutney, nylon sev and spices.

Now Raj Kachori is ready to serve and enjoy with family

 

Jodhpuri Payaz Kachori in air fryer

Kachori time…. ..

Its raining in jodhpur so I decided to serve garma garm payaz kachori to my family but no oil…..so I made jodhpuri payaz kachori in air fryer. .

 Airfryier pyaz ki kachori

Ingredients:

All Purpose Flour or Maida -1bowl

Vegetable Oil: 3-4  tablespoon for moin

Salt – As per taste

Pyaaz ki kachori Masala:

Gram Flour-4tbsp

Onion: 4 medium size pieces

Ginger: 1 piece

Green Chili: 2 -3 pieces

Coriander Leaves

Spices – As per taste: Salt, Crushed Black pepper, Red Pepper, Crushed Coriander, Garam Masala, Dry mango Powder ( Amchoor), Black Salt

Vegetable oil- 3tbsp for saute and brushing the kachori

Recipe:

Pyaaz ki Kachori Dough:

  1. Take All Purpose Flour or Maida and put vegetable oil and salt in it. Make dough out of it ( not too tight or loose).
  2. Cover it with a muslin cloth and keep it aside for 15 minutes.

Pyaaz ki Kachori Masala

  1. Put two tbsp oil in a pan. Once the oil is hot, put the chopped onions and saute till it becomes light pink then add gram flour and do sauté for 8-10 minutes.. Add all the spices mentioned above and then mix them thoroughly. After heating it for 5 minutes on slow heat, take the masala in a plate and keep it aside so that it can become at room temperature.

Making of Pyaaz ki Kachori:

  1. Take the dough and divide them into thin circular shaped balls like chapati. Roll them into flat piece (size of a regular puri).
  2. To make kachoris roll out each portion of the dough into a 2.5 inch diameter circle.
  3. Place the masala now in the center of the rolled out portion.
  4. Slowly stretch the dough to surround the filling with the dough.
  5. Seal the ends tightly and remove excess dough.
  6. Roll each filled portion into a 2 inch diameter circle to ensure that the masala does not come out.
  7. Now press the center of the kachori with your thumb in a easy manner.
  8. Pre heat airfryier for 5-8 minutes.
  9. Brush the kachori ball with oil for shining then put in the airfryier for 20-25 minutes. After 10 minutes of putting the fryier then chang e the side of the kachori

Now khaasta  Jodhpuri pyaaz ki kachori is ready to serve  with garma garam chai ( Indian Tea) and tomato sauce/green chutney….Enjoy!!
